minutesI like to keep a batch in the fridge and flash them in the oven to toast them up. You can also use them as a topper for yogurt or ice cream. Why not try our Banana and Oat Breakfast Bites with Flaxseed or try our varication and add peanut butter, raisins or berries.
Ingredients
2 ripe bananas, sliced into ½-inch rounds
½ cup rolled oats (or crushed cereal of choice)
1 tablespoon honey or maple syrup (optional, for coating)
¼ teaspoon cinnamon (optional, for extra flavour)
1 tablespoon melted butter or coconut oil (for toasting oats)
Directions
- Toast the oats: Heat a dry pan over medium heat. Add rolled oats and stir continuously for 2-3 minutes until golden and fragrant. Let cool slightly.
- Prepare the coating: If using, mix honey (or maple syrup) with cinnamon in a small bowl.
- Coat the banana slices: Lightly brush banana slices with the honey mixture, then press them into the toasted oats until evenly coated.
- Serve immediately for the best crunch!
Notes
- Let kids help mash the bananas or roll the slices in toasted oats. Hands-on involvement makes them more likely to try it.
- Drizzle a little honey or maple syrup for extra appeal while keeping it healthy.
- Serve with a side of yogurt or nut butter for a fun dipping experience.
- Mix in crushed nuts or seeds with the oats for extra texture and variety
- Start with bite-sized pieces to make it less overwhelming.
- Serve alongside their favourite fruit or a smoothie to create a balanced snack.
- Create fun shapes with banana slices and let kids choose their toppings.
How to Store Toasted Oat Banana Slices
These are best eaten fresh, but if you have leftovers, store them in an airtight container in the fridge for up to 24 hours.
Note that the oats may soften over time. For extra crispiness, re-toast the coated banana slices in the oven at 300°F (150°C) for 5 minutes before serving.
Variations
Play around with these different versions of this recipe:
- Nutty crunch: Add finely chopped almonds, pecans, or peanuts to the oats.
- For our choc-loving kiddies: Mix in a teaspoon of cocoa powder with the oats before toasting.
- Tropical flavor: Use toasted coconut flakes instead of oats.
- Cereal swap: Swap rolled oats for crushed cornflakes, granola, or rice cereal.
- Protein boost: Add a drizzle of peanut butter or almond butter before rolling in oats.
Common Mistakes to Avoid
There’s not much to making these little banana oat treats, but here’s what to avoid:
- Not toasting enough: Untoasted oats can taste raw and just aren’t crunchy.
- Overripe bananas: Too soft, and they’ll turn mushy instead of holding their shape.
- Too much honey/syrup: Makes the coating sticky instead of crispy.
- Not pressing the coating firmly: They’ll fall off if you don’t press the oats on well.
- Waiting too long to eat: The oats lose their crunch if left sitting too long.
