We’ve given a little love to frozen yoghurt with this Strawberry Yoghurt Bark recipe. It’s a wonderfully simple, no-bake treat that’s perfect for fussy eaters who love a little crunch without the fuss. Creamy yoghurt is swirled with sweet strawberries, delivering a hit of calcium, protein, and vitamin C. This bark is a freezer favourite, and little hands will love helping break it into fun shards. A healthier alternative to ice cream, but just as satisfying on a hot day.

Ingredients

  • 400g natural Greek yoghurt (or plain yoghurt for a lighter option)

  • 2 tbsp runny honey or maple syrup (optional for sweetness)

  • 150g fresh strawberries, finely chopped

  • 1 tsp vanilla extract (optional)

Directions

  • Line a baking tray with parchment paper.
  • In a mixing bowl, stir together the yoghurt, honey (if using), and vanilla.
  • Pour the yoghurt mixture onto the tray and spread it evenly to about 1cm thick.
  • Scatter the chopped strawberries over the top and gently swirl with a spoon for a marbled effect.
  • Place the tray in the freezer for at least 2 hours, or until completely set.
  • Once frozen, break into shards and serve straight from the freezer.
