It’s a wonderfully simple, no-bake treat that’s perfect for fussy eaters who love a little crunch without the fuss. Creamy yoghurt is swirled with sweet strawberries, delivering a hit of calcium, protein, and vitamin C. This bark is a freezer favourite, and little hands will love helping break it into fun shards. A healthier alternative to ice cream, but just as satisfying on a hot day.
Ingredients
400g natural Greek yoghurt (or plain yoghurt for a lighter option)
2 tbsp runny honey or maple syrup (optional for sweetness)
150g fresh strawberries, finely chopped
1 tsp vanilla extract (optional)
Directions
- Line a baking tray with parchment paper.
- In a mixing bowl, stir together the yoghurt, honey (if using), and vanilla.
- Pour the yoghurt mixture onto the tray and spread it evenly to about 1cm thick.
- Scatter the chopped strawberries over the top and gently swirl with a spoon for a marbled effect.
- Place the tray in the freezer for at least 2 hours, or until completely set.
- Once frozen, break into shards and serve straight from the freezer.
