Ingredients
400g chicken breast fillets, cut into finger-sized strips
75g plain breadcrumbs
25g grated Parmesan cheese (optional)
1 tsp dried mixed herbs
1 tsp paprika
1 large egg, beaten
1 tbsp olive oil
Salt and pepper, to taste
For the yoghurt dip (optional)
1 tsp mild mustard or honey (optional)
A squeeze of lemon juice
Directions
- Preheat the oven to 200°C (180°C fan)/Gas mark 6. Line a baking tray with baking paper.
- In a shallow bowl, mix the breadcrumbs, Parmesan, dried herbs, paprika, salt, and pepper.
- Dip each chicken strip first into the beaten egg, then coat well in the breadcrumb mixture. Place on the baking tray in a single layer.
- Drizzle the olive oil over the chicken strips to help them crisp up.
- Bake for 20–25 minutes, turning halfway through, until the chicken is cooked through and the coating is golden and crunchy.
- Meanwhile, mix all the yoghurt dip ingredients in a small bowl and chill until ready to serve.
