minutesHidden-Veggie Pasta Shapes recipe. This fun and colourful dish uses playful pasta shapes that children love, paired with a smooth tomato sauce packed with hidden vegetables like carrot and courgette. These veggies add valuable vitamins and fibre without overpowering the familiar tomato flavour. Perfect for a quick lunch or light dinner, this recipe is great for fussy eaters who prefer their food saucy or dry—either way, it’s a winner!
Ingredients
300g pasta shapes (e.g., stars, shells, or letters)
1 tbsp olive oil
1 small onion, finely chopped
1 garlic clove, crushed
1 medium carrot, peeled and grated
1 small courgette, grated
400g tin chopped tomatoes
1 tsp dried oregano
Salt and pepper, to taste
Optional: grated cheese to sprinkle
Directions
- Cook the pasta in boiling salted water according to the packet instructions until al dente. Drain and set aside.
- While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the onion and garlic, cooking gently until soft but not browned (about 5 minutes).
- Stir in the grated carrot and courgette, cooking for another 3-4 minutes until softened.
- Add the chopped tomatoes and oregano, then simmer gently for 10 minutes, stirring occasionally. Season with salt and pepper to taste.
- Use a hand blender to carefully blend the sauce until smooth, hiding the vegetables from view—perfect for fussy eaters!
- Toss the cooked pasta with the sauce, or serve the sauce on the side for children who prefer dry pasta.
- Sprinkle with grated cheese if liked, and serve warm.
Key Notes
- For a crunchy, dry option, serve the pasta plain with a side of raw veggie sticks like cucumber or carrot.
- This sauce freezes well in portions, making it perfect for batch cooking.
- Try swapping courgette for peeled sweet potato or butternut squash for a different flavour and sweetness.
- To encourage tasting, let your child decorate their plate with their favourite pasta shapes or add cheese toppings themselves—it makes mealtimes more fun!
Variation Tips
Use different shaped pasta to keep mealtimes fun and engaging.
Blend in extra veggies like spinach, carrots, or butternut squash.
Add grated cheese on top for extra flavour.
Stir in some protein like shredded chicken or lentils.
Common Mistakes to Avoid
Leaving the sauce too chunky – picky eaters may spot the veggies.
Overcooking the pasta – kids often prefer softer but not mushy pasta.
Using too many strong-flavoured veggies – can overpower the sauce.
Skipping seasoning – a pinch of herbs or mild spices makes it tastier.
