minutesWe’ve given a little love to our Beetroot, Carrot & Apple Boost recipe. This vibrant juice is naturally sweet and earthy, bursting with antioxidants from beetroot, vitamin A from carrots, and vitamin C from apples. It’s a brilliant way to introduce kids to the power of vegetables in a form that feels like a treat. Perfect for an after-school refresher or a morning energy kick.
Ingredients
2 small raw beetroots, peeled and chopped
2 medium carrots, peeled and chopped
2 sweet apples, cored and chopped
½ lemon, juiced (optional, for a zingy lift)
150ml cold water (or more if needed)
Directions
- Place the beetroot, carrots, apples, and lemon juice (if using) into a blender or juicer.
- Add the cold water and blend until smooth.
- Strain through a fine sieve or muslin cloth if your child prefers a smoother juice.
- Pour into cups and serve immediately over ice for extra freshness
Key Notes
- For fussy eaters, start with extra apple to make the juice sweeter, then gradually increase the beetroot and carrot over time.
- Serve in a fun cup with a straw – presentation really helps little ones!
- Adults can enjoy this too with an added thumb of fresh ginger for a grown-up kick.
- Leftover juice can be frozen into ice lolly moulds for a healthy snack on hot days.
Variation Tips
Sweeter Version – Add a splash of orange juice for a fruity, kid-friendly twist.
Green Upgrade – Blend in cucumber or celery for a fresher, detox-style drink.
Smoothie Style – Add banana or yogurt for a creamy, filling version.
Spice It Up – A touch of ginger pairs beautifully with beetroot and apple for extra warmth.
Post-Workout Boost – Mix with a little lemon and honey for hydration and recovery.
Common Mistakes to Avoid
Too Much Beetroot – Overpowering beetroot can taste earthy and bitter, which kids and fussy eaters often dislike.
Not Enough Sweetness – Skipping apple (or using sour apples only) can make the juice taste flat or too “vegetable-like.”
Overusing Ginger or Lemon (if added) – Too much spice or sharpness can overwhelm the natural balance.
Skipping Chill Time – Beetroot blends taste best served cold; warm juice may taste too heavy.
Unpeeled Old Beetroot – Using woody or unpeeled beetroot can make the juice taste gritty and unpleasant.
