Ingredients

  • 150g (5.3 ounces) whole wheat flour

  • 100g (3.5 ounces) rolled oats

  • 50g (1.8 ounces) ground flaxseed or chia seeds

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 2 ripe bananas, mashed (about 200g or 7 ounces)

  • 120ml (1/2 cup) milk (dairy or non-dairy)

  • 2 tablespoons honey or maple syrup

  • 1 large egg

  • 60ml (1/4 cup) unsweetened applesauce or mashed avocado

  • 60ml (1/4 cup) melted coconut oil or vegetable oil

  • 1 teaspoon vanilla extract

  • Diced apple:
    Introduces natural sweetness and a juicy texture to the muffins, providing a pop of fruity flavor with every bite.

  • Raisins:
    Add a natural sweetness and chewy texture to the muffins, reminiscent of classic oatmeal cookies, without being overly sweet.

Directions

  • Preheat the oven:
    Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or lightly grease the muffin cups with oil.
  • Prepare the dry ingredients:
    In a large mixing bowl, combine the whole wheat flour, rolled oats, ground flaxseed or chia seeds, baking powder, baking soda, salt, and ground cinnamon. Stir until well combined.
  • Prepare the wet ingredients:
    In a separate bowl, whisk together the mashed bananas, milk, honey or maple syrup, egg, applesauce or mashed avocado, melted coconut oil or vegetable oil, and vanilla extract until smooth.
  • Combine wet and dry ingredients:
    Pour the wet ingredients into the bowl of dry ingredients. Stir until just combined, being careful not to overmix. If using any optional add-ins, gently fold them into the batter at this stage.
  • Fill the muffin cups:
    Divide the muffin batter evenly among the prepared muffin cups, filling each cup about 3/4 full.
  • Bake the muffins:
    Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool and serve:
    Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, serve the muffins to your toddlers or fussy eaters as a healthy and delicious snack or breakfast option.

Tips for the Best Magic Muffins. Muffins are part of my weekly repertoire – here’s how I get them perfect every time I make them:

  • Use high-quality ingredients: Start with fresh ingredients for the best flavor and texture. Use fresh fruits, good-quality flour, and natural sweeteners like honey or maple syrup.
  • Don’t overmix the batter: Overmixing is the number one problem faced. Mix the batter until the dry ingredients are incorporated into the wet ingredients. A few lumps in the batter are okay. Overmixing will result in dense and dry muffins, yikes!
  • Properly measure ingredients: Accurate measurements are essential for baking. Use a kitchen scale or measuring cups and spoons to measure ingredients accurately, especially flour. Level off flour when measuring to avoid packing it down.
  • Experiment with flavors: Magic muffins are versatile, so don’t be afraid to experiment with different flavor combinations. Add-ins like chocolate chips, nuts, dried fruits, or spices can enhance the flavor of the muffins.
  • Fill muffin cups correctly: Fill the muffin cups about 2/3 to 3/4 full with batter. This allows room for the muffins to rise without overflowing. Use an ice cream scoop or spoon to distribute the batter evenly.
  • Preheat the oven: Make sure your oven is fully preheated before baking the muffins. A hot oven ensures that the muffins rise properly and bake evenly.
  • Check for doneness: To avoid overbaking, check the muffins a few minutes before the recommended baking time is up. Insert a toothpick into the center of a muffin—if it comes out clean or with a few crumbs, the muffins are done.
  • Cool properly: Allow the muffins to cool in the pan for 5-10 minutes before transferring them to a wire rack to cool completely. Cooling in the pan helps set the muffins and prevents them from collapsing.
  • Store correctly: Store leftover magic muffins in an airtight container at room temperature for up to 2-3 days, or freeze them for longer storage. To reheat frozen muffins, microwave them for 20-30 seconds or bake them in a 350°F oven for 5-10 minutes.
