Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup Greek yogurt
1/2 cup milk (or dairy-free alternative)
1 large egg
2 tablespoons melted butter (or coconut oil)
1 teaspoon vanilla extract
For the strawberries:1 1/2 cups fresh strawberries, sliced
1 tablespoon sugar (optional, depending on sweetness of berries)
For the whipped cream:1/2 cup heavy cream or coconut cream
1 tablespoon powdered sugar
1/2 teaspoon vanilla extract
Directions
- Prepare the strawberries: Toss the sliced strawberries with sugar (optional) in a bowl and set aside to macerate for 10-15 minutes.
- Make the pancake batter: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the Greek yogurt, milk, egg, melted butter, and vanilla. Gradually combine the wet and dry ingredients, stirring until just mixed (a few lumps are fine).
- Cook the pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray. Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook for 2-3 minutes on one side, until bubbles form on the surface, then flip and cook for an additional 1-2 minutes, until golden brown.
- Make the whipped cream: In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Assemble the pancakes: Stack the pancakes on plates, top with macerated strawberries, a dollop of whipped cream, and drizzle with any extra strawberry syrup. Serve immediately and enjoy!
