Ingredients
2 large flour tortillas
100g grated mild cheddar cheese
50g grated carrot
50g grated courgette (zucchini), excess moisture squeezed out
1 tsp olive oil or butter
Optional: pinch of mild paprika or dried oregano
Directions
- Heat a non-stick frying pan over a medium heat.
- In a bowl, mix the grated cheese, carrot, courgette, and optional herbs.
- Place one tortilla flat on a clean surface. Spread the cheese and veg mixture evenly over half of the tortilla.
- Fold the tortilla in half to cover the filling.
- Lightly grease the frying pan with olive oil or butter.
- Carefully place the folded tortilla in the pan. Cook for 3–4 minutes on each side, or until golden brown and crispy, and the cheese has melted.
- Remove from the pan and let it cool slightly before cutting into child-friendly wedges.
