No-Sauce Cheese & Veggie Quesadillas recipe. These crispy wraps are packed with melted cheese and hidden grated vegetables, making them a perfect, fuss-free lunch or snack for picky eaters. The mild, gooey cheese combined with the crunchy outside creates a comforting texture that’s easy to enjoy — no sauce needed, but always an option. Plus, the grated veggies sneak in extra vitamins and fibre without changing the familiar taste kids love.

Ingredients

  • 2 large flour tortillas

  • 100g grated mild cheddar cheese

  • 50g grated carrot

  • 50g grated courgette (zucchini), excess moisture squeezed out

  • 1 tsp olive oil or butter

  • Optional: pinch of mild paprika or dried oregano

Directions

  • Heat a non-stick frying pan over a medium heat.
  • In a bowl, mix the grated cheese, carrot, courgette, and optional herbs.
  • Place one tortilla flat on a clean surface. Spread the cheese and veg mixture evenly over half of the tortilla.
  • Fold the tortilla in half to cover the filling.
  • Lightly grease the frying pan with olive oil or butter.
  • Carefully place the folded tortilla in the pan. Cook for 3–4 minutes on each side, or until golden brown and crispy, and the cheese has melted.
  • Remove from the pan and let it cool slightly before cutting into child-friendly wedges.
